Blu di Bufala with Breme onion jam

This cheese ages for 110 days, reaching the perfect ripeness after about 150 days in a 26° environment with elevated humidity (90%). Its flavour passes from sweet to spicy, leaving the classic almond-like after-taste of milk.

Goat-milk Fontina cheese from Elvo

This cheese is produced with raw whole milk from Saanen goats bred in the open air at the fulcrum of the Elvo River valley at the border between the regions of Piedmont and Valle D’Aosta. The cheese is pressed with rennet and is aged for several months in the cellar, where it is constantly turned over and washed with water and salt. Intense taste with hints of butter.

Marzolino di Chianti Pecorino:

This cheese is produced using whole sheep's milk in the heart of the Chianti region of Tuscany.
It is made at a small dairy farm run by 8 sheep farmers who mostly breed Sardinian sheep. It is a traditional Tuscan cheese; very young, with approximately 30/40 days’ ageing, of oval shape. Its name indicates the period of production, the month of March, which has never changed. The spring is the best season for the production of this cheese because it is when the sheep begin to graze.
